- 4 cups (480g) confectioners’ sugar
- 2 Tablespoons (30ml) heavy cream
- 1 and 1/2 teaspoons pure vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, mix melted butter and sugar until combined. Add the egg, sour cream, and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Fold in the rainbow sprinkles.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely.
- For the buttercream, beat softened butter and cream cheese until smooth. Gradually add confectioners’ sugar, followed by heavy cream and vanilla, mixing until creamy. Adjust salt to taste.
- Frost cooled cupcakes with the cream cheese buttercream and garnish with additional rainbow sprinkles if desired.
