  • 4 cups (480g) confectioners’ sugar
  • 2 Tablespoons (30ml) heavy cream
  • 1 and 1/2 teaspoons pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix melted butter and sugar until combined. Add the egg, sour cream, and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined. Fold in the rainbow sprinkles.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely.
  7. For the buttercream, beat softened butter and cream cheese until smooth. Gradually add confectioners’ sugar, followed by heavy cream and vanilla, mixing until creamy. Adjust salt to taste.
  8. Frost cooled cupcakes with the cream cheese buttercream and garnish with additional rainbow sprinkles if desired.
