Homemade Funfetti-Style Cupcakes are delightful, colorful treats that bring joy to any occasion. These soft, fluffy cupcakes are bursting with rainbow sprinkles and topped with a rich vanilla cream cheese buttercream.

- 1 and 2/3 cups (209g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (8 Tbsp; 113g) unsalted butter

- 1 large egg

- 1/4 cup (60g) sour cream or plain yogurt

- 2 teaspoons pure vanilla extract
- 3/4 cup (180ml) whole milk

- 6 Tablespoons (60g) rainbow sprinkles
- 3/4 cup (12 Tbsp; 170g) unsalted butter
- softened to room temperature
- 4 ounces (113g) full-fat brick cream cheese
- softened to room temperature
- 4 cups (480g) confectioners’ sugar
- 2 Tablespoons (30ml) heavy cream
- 1 and 1/2 teaspoons pure vanilla extract
- salt

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter and sugar, mixing until well combined. Then add the egg, sour cream, and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, alternating with the whole milk, mixing just until incorporated. Gently fold in the rainbow sprinkles.
- Spoon the batter into the lined cupcake pan, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- While the cupcakes are baking, prepare the vanilla cream cheese buttercream by beating the softened butter and cream cheese together until creamy. Gradually add the confectioners’ sugar, followed by the heavy cream and vanilla extract, mixing until smooth and fluffy. Add a pinch of salt to taste.
- Allow the cupcakes to cool completely before frosting them with the buttercream. Optionally, sprinkle additional rainbow sprinkles on top for decoration.
Notes
Make sure all ingredients are at room temperature for the best texture. You can substitute the sour cream with plain yogurt if preferred.
