- 1 tbsp cooking oil
- 1 diced yellow onion
- 3 minced garlic cloves
- 2 celery stalks or 1/2 small celery root diced
- 2 medium carrots diced
- 2 lb peeled potatoes chopped
- 1/2 tsp dried marjoram
- Pinch ground nutmeg
- Salt and black pepper as needed
- 4 cups vegetable broth or water
- 2 whole bay leaves (optional)
- 1/3 cup non-dairy cream or coconut milk
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the diced onion and sauté until translucent.
- Stir in the minced garlic, diced celery, and carrots, and cook for another 5 minutes.
- Add the chopped potatoes, dried marjoram, ground nutmeg, salt, and pepper. Stir to combine.
- Pour in the vegetable broth or water and add the bay leaves if using. Bring the mixture to a boil.
- Reduce heat and let it simmer for about 25-30 minutes or until the potatoes are tender.
- Remove the bay leaves, then use an immersion blender to blend the soup until smooth, or mash with a potato masher for a chunkier texture.
- Stir in the non-dairy cream or coconut milk and adjust the seasoning if necessary. Serve hot.
