Ingredients

  • 1 tbsp cooking oil
  • 1 diced yellow onion
  • 3 minced garlic cloves
  • 2 celery stalks or 1/2 small celery root diced
  • 2 medium carrots diced
  • 2 lb peeled potatoes chopped
  • 1/2 tsp dried marjoram
  • Pinch ground nutmeg
  • Salt and black pepper as needed
  • 4 cups vegetable broth or water
  • 2 whole bay leaves (optional)
  • 1/3 cup non-dairy cream or coconut milk

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the minced garlic, diced celery, and carrots, and cook for another 5 minutes.
  3. Add the chopped potatoes, dried marjoram, ground nutmeg, salt, and pepper. Stir to combine.
  4. Pour in the vegetable broth or water and add the bay leaves if using. Bring the mixture to a boil.
  5. Reduce heat and let it simmer for about 25-30 minutes or until the potatoes are tender.
  6. Remove the bay leaves, then use an immersion blender to blend the soup until smooth, or mash with a potato masher for a chunkier texture.
  7. Stir in the non-dairy cream or coconut milk and adjust the seasoning if necessary. Serve hot.

Notes

For extra flavor, serve with fresh herbs or crusty bread on the side.
