  • 34 cups (360–480 g) powdered sugar

  • 34 tablespoons peach puree
  • 12 tablespoons champagne or sparkling wine

  • Fresh peach slices
  • Candied peach or cherry (optional)
  • Sparkling sugar or granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another large bowl, cream the butter and sugar until light and fluffy.
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Mix in the champagne or sparkling wine, whole milk, vanilla extract, and peach puree until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  7. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow cupcakes to cool completely on a wire rack.
  9. For the buttercream, beat the softened butter until creamy, then gradually add powdered sugar.
  10. Mix in the peach puree, champagne, and a pinch of salt, adjusting sugar to desired sweetness.
  11. Frost cooled cupcakes with the peach buttercream and garnish with fresh peach slices and optional candied fruit or sparkling sugar.
