Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another large bowl, cream the butter and sugar until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- Mix in the champagne or sparkling wine, whole milk, vanilla extract, and peach puree until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow cupcakes to cool completely on a wire rack.
- For the buttercream, beat the softened butter until creamy, then gradually add powdered sugar.
- Mix in the peach puree, champagne, and a pinch of salt, adjusting sugar to desired sweetness.
- Frost cooled cupcakes with the peach buttercream and garnish with fresh peach slices and optional candied fruit or sparkling sugar.
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. To make it vegan, substitute the eggs with flax eggs and use plant-based butter and milk.
