Description

Honey BBQ Chicken and Rice is a comforting one-pan wonder that combines juicy chicken thighs with savory rice and a sweet, tangy barbecue sauce.


Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion
  • 3 cloves Garlic

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side.
  2. Remove the chicken from the skillet and set aside. In the same skillet, sauté the chopped onion and minced garlic until soft, about 3-4 minutes.
  3. Stir in the rice, then add the chicken broth (or water) and bring to a boil.
  4. Reduce the heat to low, then return the chicken to the skillet, pouring the barbecue sauce and honey over the top. Stir gently to combine.
  5. Cover and simmer for about 25-30 minutes or until the rice is cooked and has absorbed the liquid.

Notes

For a healthier option, substitute chicken thighs for chicken breasts and use brown rice instead of white rice.
