Honey BBQ Chicken and Rice is a comforting one-pan wonder that combines juicy chicken thighs with savory rice and a sweet, tangy barbecue sauce.

- 1.5 lbs Chicken Thighs
- 2 tbsp Olive Oil
- 1.5 cups Long-Grain White Rice
- 3 cups Chicken Broth or Water
- 1 cup Barbecue Sauce
- 0.5 cup Honey
- 1 medium Onion
- 3 cloves Garlic
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, sauté the chopped onion and minced garlic until soft, about 3-4 minutes.
- Stir in the rice, then add the chicken broth (or water) and bring to a boil.
- Reduce the heat to low, then return the chicken to the skillet, pouring the barbecue sauce and honey over the top. Stir gently to combine.
- Cover and simmer for about 25-30 minutes or until the rice is cooked and has absorbed the liquid.

Notes
For a healthier option, substitute chicken thighs for chicken breasts and use brown rice instead of white rice.
