- skinless chicken breasts cut into 1-inch cubes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika

- Salt and freshly ground black pepper to taste
- 1 cup Honey BBQ sauce
- 2 lbs Yukon Gold potatoes scrubbed and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup chopped green onions (optional)
- Sour cream or Greek yogurt for serving
- Crispy fried onions
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken cubes, olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to coat the chicken evenly.
- Spread the chicken mixture on a baking sheet lined with parchment paper and bake for 20 minutes.
- While the chicken is baking, prepare the potatoes. In another bowl, toss the potato cubes with olive oil, garlic powder, dried rosemary, dried thyme, salt, and black pepper.
- After 20 minutes, remove the chicken from the oven and stir in the honey BBQ sauce. Add the seasoned potatoes to the baking sheet and mix everything together.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes or until the potatoes are tender and golden.
- If desired, sprinkle shredded cheddar cheese on top and return to the oven for 2-3 minutes to melt the cheese.
- Garnish with chopped green onions and serve with sour cream or Greek yogurt and crispy fried onions.
