Ingredients

  • 1/2 tsp. paprika

  • 8 oz. pancetta
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic
  • grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches
  • sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano, garlic powder, and 1/2 tsp paprika. Season the chicken thighs with the spice mixture.
  3. In a large skillet, cook pancetta over medium heat until crispy. Remove and set aside, leaving the fat in the skillet.
  4. Add olive oil to the skillet and sear the chicken thighs on both sides until browned, about 4-5 minutes per side. Remove and set aside.
  5. In the same skillet, sauté shallot and garlic until translucent. Add chicken broth, remaining salt, pepper, oregano, and paprika, and simmer for 5 minutes.
  6. Stir in butter and honey until melted and combined.
  7. Return chicken and pancetta to the skillet, adding thyme and peach slices. Bake for 20 minutes or until chicken is cooked through.
  8. Serve hot, garnished with fresh basil and thyme.

Notes

For added flavor, let the chicken marinate in the seasoning for at least 30 minutes before cooking.
