- 2 pounds chicken thighs boneless skinless
- 1/3 cup low-sodium soy sauce
- 1/3 cup honey
- 1/3 cup ketchup
- 6 cloves garlic minced
- 1/2 teaspoon apple cider vinegar
- 1 teaspoon grated fresh ginger
- 1 pinch crushed red pepper flakes optional
- 2 tablespoons cornstarch
Instructions
- In a mixing bowl, combine the soy sauce, honey, ketchup, minced garlic, apple cider vinegar, grated ginger, and crushed red pepper flakes. Whisk until well blended.
- Place the chicken thighs in the slow cooker and pour the sauce over them, ensuring they are fully coated.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender.
- Once cooked, remove the chicken thighs and set aside. In a small bowl, mix the cornstarch with a bit of water to create a slurry and pour it into the slow cooker.
- Stir the sauce on high heat until it thickens, about 5-10 minutes.
- Serve the chicken thighs drizzled with the sauce, garnished with chopped scallions and sesame seeds. Serve over rice if desired.
Notes
For a spicier kick, increase the crushed red pepper flakes. Make sure to adjust the honey if you prefer less sweetness.
