Description

Ingredients

  • 1 cup plain/all-purpose flour
  • 1/3 cup cocoa powder (unsweetened)
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 cup caster/superfine sugar
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup full fat milk
  • 75g unsalted butter (melted and cooled slightly)
  • 1 tbsp neutral oil
  • 1 tsp vanilla extract
  • 1/2 cup boiling water
  • 1 cup thickened cream
  • 1 1/4 cups dark chocolate melts or chips
  • vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, sugar, and salt.
  3. In another bowl, whisk together the egg, milk, melted butter, oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Slowly stir in the boiling water until the batter is smooth.
  5. Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the chocolate fudge sauce by heating the cream in a saucepan over medium heat until it’s warm. Remove from heat and add the dark chocolate, stirring until melted and smooth.
  7. Once the cake is done, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve the cake warm with a generous drizzle of chocolate fudge sauce and a scoop of vanilla ice cream on the side.

Notes

Make sure all your ingredients are at room temperature for the best results. Sift the cocoa powder to avoid lumps for a smoother batter.
