- 1 cup plain/all-purpose flour
- 1/3 cup cocoa powder (unsweetened)
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1 cup caster/superfine sugar
- 1/4 tsp salt
- 1 large egg
- 1/2 cup full fat milk
- 75g unsalted butter (melted and cooled slightly)
- 1 tbsp neutral oil
- 1 tsp vanilla extract
- 1/2 cup boiling water
- 1 cup thickened cream
- 1 1/4 cups dark chocolate melts or chips
- vanilla ice cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, sugar, and salt.
- In another bowl, whisk together the egg, milk, melted butter, oil, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Slowly stir in the boiling water until the batter is smooth.
- Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the chocolate fudge sauce by heating the cream in a saucepan over medium heat until it’s warm. Remove from heat and add the dark chocolate, stirring until melted and smooth.
- Once the cake is done, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve the cake warm with a generous drizzle of chocolate fudge sauce and a scoop of vanilla ice cream on the side.
Notes
Make sure all your ingredients are at room temperature for the best results. Sift the cocoa powder to avoid lumps for a smoother batter.
