Description

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans

  • 6 Tablespoons cold butter
  • 1 (8 ounce) package cream cheese
  • softened
  • 1 cup whipped cream or whipped topping
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 4 1/2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 1/2 cup water
  • 2 cups fresh huckleberries or blueberries
  • (divided)
  • 1 1/2 teaspoons butter
  • Garnish with extra whipping cream and more berries if desired

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, brown sugar, and chopped nuts.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Press the mixture into the bottom of a pie pan to form the crust.
  5. Bake the crust for 15 minutes, then let it cool.
  6. In another bowl, beat the cream cheese until smooth.
  7. Add the whipped cream, confectioners’ sugar, and vanilla extract, and mix until well combined.
  8. In a saucepan, combine the granulated sugar, cornstarch, salt, water, and 1 cup of the huckleberries.
  9. Cook over medium heat, stirring until the mixture thickens; then remove from heat.
  10. Stir in the remaining huckleberries and butter.
  11. Spread the cream cheese mixture into the cooled crust and top with the huckleberry mixture.
  12. Chill in the refrigerator for at least 2 hours before serving.

Notes

For a more intense flavor, use fresh huckleberries if available. You can also substitute blueberries if huckleberries are not in season.
