Delicious Huckleberry Crumb Bars featuring a buttery crumb base and a sweet, fruity topping.

- 1–3/4 cups (225 grams) all-purpose flour
- 1/8 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 6 tablespoons (75 grams) granulated sugar
- 1/4 cup (50 grams) light brown sugar
- 12 tablespoons (169 grams) unsalted butter melted
- 1 teaspoon pure vanilla extract
- 2 cups (300 grams) huckleberries
- 1 tablespoon cornstarch
- 1/2 cup (100 grams) granulated sugar
- 1/8 teaspoon kosher salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a bowl, mix together the flour, baking powder, kosher salt, cinnamon, granulated sugar, and brown sugar.
- Add the melted butter and vanilla extract to the dry ingredients and mix until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish to form the base.
- In another bowl, combine the huckleberries, cornstarch, granulated sugar, and kosher salt.
- Spread the huckleberry mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture over the huckleberries.
- Bake in the preheated oven for 30 minutes or until golden brown.
- Let cool before slicing into bars and serve.
Notes
For extra flavor, consider adding a squeeze of lemon juice to the huckleberry mixture.
