Delicious Huckleberry Crumb Bars featuring a buttery crumb base and a sweet, fruity topping.


Ingredients

  • 13/4 cups (225 grams) all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons (75 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar
  • 12 tablespoons (169 grams) unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 2 cups (300 grams) huckleberries
  • 1 tablespoon cornstarch
  • 1/2 cup (100 grams) granulated sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix together the flour, baking powder, kosher salt, cinnamon, granulated sugar, and brown sugar.
  3. Add the melted butter and vanilla extract to the dry ingredients and mix until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish to form the base.
  5. In another bowl, combine the huckleberries, cornstarch, granulated sugar, and kosher salt.
  6. Spread the huckleberry mixture over the crust in the baking dish.
  7. Sprinkle the remaining crumb mixture over the huckleberries.
  8. Bake in the preheated oven for 30 minutes or until golden brown.
  9. Let cool before slicing into bars and serve.

Notes

For extra flavor, consider adding a squeeze of lemon juice to the huckleberry mixture.
