Delightfully spiced Iced Pumpkin Cookies that are soft, chewy, and perfect for fall.

- 2 1/2 cups all-purpose flour
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup white sugar
- 1 stick softened butter
- 1 cup pumpkin puree
- 1 egg
- 1 tsp vanilla extract
- 1 cup confectioners’ sugar
- 1 tbsp melted butter
- 3 tbsp milk
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and white sugar until light and fluffy.
- Add the pumpkin puree, egg, and vanilla extract to the mixture, blending until well combined.
- In another bowl, whisk together the flour, spices, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Drop tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-20 minutes or until the edges are lightly browned. Let cool on a wire rack.
- For the icing, whisk together the confectioners’ sugar, melted butter, vanilla extract, and milk until smooth.
- Drizzle the icing over the cooled cookies and allow it to set before serving.
Notes
Store the cookies in an airtight container to keep them fresh. These cookies can also be frozen for later enjoyment.
