- 1 cup cane sugar
- ½ cup cane sugar
- ½ cup dark brown sugar
- 1 cup water
- ½ cup pumpkin puree
- 2–3 cinnamon sticks
- 3 tsp cloves
- 2–3 tablespoon peeled and chopped fresh ginger
- 1 tbsp vanilla extract or vanilla paste
- ¼ tsp ground nutmeg (optional)
Instructions
- In a saucepan, combine the cane sugar, dark brown sugar, and water. Bring to a boil over medium heat until the sugar dissolves.
- Add the pumpkin puree, cinnamon sticks, cloves, fresh ginger, and ground nutmeg (if using) to the sugar mixture. Simmer for about 30 minutes, stirring occasionally to prevent sticking.
- Remove from heat and stir in vanilla extract or vanilla paste. Let the mixture cool completely.
- Once cool, strain the mixture into a jar or bottle to remove the solids.
- To serve, mix the pumpkin spice syrup with cold milk and ice in a glass. Stir well and enjoy your Iced Pumpkin Spiced Latte!
