- 4 slices Italian bread
- thickly sliced
- 2 tablespoons pesto
- 1 chicken breast
- cooked and sliced in half lengthwise
- 2 tablespoons red onion
- slivered
- 1/4 cup roasted red peppers
- thinly sliced
- 4 ounces low moisture
- part skim mozzarella
- shredded or thinly sliced
- Cooking Spray
Instructions
- Preheat a panini press or skillet over medium heat.
- Spread pesto on one side of each slice of Italian bread.
- Layer half of the chicken, red onion, roasted red peppers, and mozzarella on two slices of bread; top with the other slices, pesto side down.
- Spray the outside of the sandwiches with cooking spray, then grill in the panini press or skillet until the bread is golden brown and crispy, about 5-7 minutes.
- Slice and serve warm.
