Description

This Italian Chicken Panini is a delightful combination of flavors, featuring tender chicken breast, vibrant roasted red peppers, and creamy mozzarella, all sandwiched between slices of crusty Italian bread and infused with aromatic pesto.


Ingredients

  • 4 slices Italian bread
  • thickly sliced
  • 2 tablespoons pesto
  • 1 chicken breast
  • cooked and sliced in half lengthwise
  • 2 tablespoons red onion
  • slivered
  • 1/4 cup roasted red peppers
  • thinly sliced
  • 4 ounces low moisture
  • part skim mozzarella
  • shredded or thinly sliced
  • Cooking Spray

Instructions

  1. Preheat a panini press or skillet over medium heat.
  2. Spread pesto on one side of each slice of Italian bread.
  3. Layer half of the chicken, red onion, roasted red peppers, and mozzarella on two slices of bread; top with the other slices, pesto side down.
  4. Spray the outside of the sandwiches with cooking spray, then grill in the panini press or skillet until the bread is golden brown and crispy, about 5-7 minutes.
  5. Slice and serve warm.
