- 4 links Italian-style chicken sausage sliced into 1-inch coins
- 1 tablespoon olive oil
- 3–4 cloves garlic minced
- 24 ounces marinara sauce homemade or store-bought
- 1/2 cup heavy cream or half and half
- 1/2 teaspoon red pepper flakes
- 1–2 handfuls fresh baby spinach
- kosher salt and black pepper
- Parmesan parsley or basil

Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the sliced chicken sausage. Cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the marinara sauce and bring to a simmer. Add the heavy cream and red pepper flakes, stirring to combine.
- Add the cooked pasta and fresh spinach to the skillet, tossing everything together until well combined and the spinach has wilted.
- Season with kosher salt and black pepper to taste, and serve garnished with Parmesan, parsley, or basil if desired.
Notes
For a little extra kick, adjust the amount of red pepper flakes to your liking. You can also substitute the chicken sausage with turkey sausage for a lighter option.
