Description
Italian Love Cake is a delightful dessert that combines layers of decadent chocolate cake, creamy ricotta cheese, and a rich chocolate pudding topping for a truly irresistible treat.

- 2 containers (15 ounces each) ricotta cheese
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs (room temperature)
- 1 box (15.25 ounces) chocolate or devil’s food cake mix
- ½ cup canola oil
- 1 cup water
- 3 large eggs
- 1 box (5 ounces) instant chocolate pudding
- 3 cups cold milk
- 1 container (8 ounces) whipped topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
- In a large bowl, mix together the ricotta cheese, granulated sugar, vanilla extract, and 4 large eggs until well combined.
- In another bowl, prepare the chocolate cake mix according to package instructions using ½ cup canola oil and 1 cup water. Add the 3 large eggs and mix until smooth.
- Pour the chocolate cake batter into the prepared baking dish. Carefully spoon the ricotta mixture on top of the cake batter; do not mix.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan.
- Once cooled, prepare the instant chocolate pudding using 3 cups of cold milk according to package instructions. Spread the pudding over the cooled cake.
- Top with whipped topping and refrigerate for at least 2 hours before serving.
Notes
For an extra touch, sprinkle chocolate shavings or cocoa powder on top of the whipped topping before serving.
