Description

Delight in the flavors of Italy with these Italian Peach Cookies filled with sweet peach marmalade or a luscious cream filling.


Ingredients

  • 3 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 large eggs
  • 3/4 cup sugar
  • 3/4 cup milk
  • 1/2 cup (1 stick) unsalted butter
  • melted and cooled
  • Peach marmalade or your favourite cream filling

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour and baking powder.
  3. In another bowl, beat the eggs and then add sugar, milk, and melted butter, mixing until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Scoop tablespoon-sized amounts of dough and flatten them on the prepared baking sheet.
  6. Place a small dollop of peach marmalade or cream filling in the center of each cookie.
  7. Cover the filling with another piece of dough and seal the edges.
  8. Bake for 15-20 minutes or until lightly golden.
  9. Allow to cool before serving.

Notes

These cookies can be stored in an airtight container for up to a week. Experiment with different fillings for variety!
