Delight in the flavors of Italy with these Italian Peach Cookies filled with sweet peach marmalade or a luscious cream filling.

- 3 3/4 cups all-purpose flour
- 1 tablespoon baking powder
- 3 large eggs
- 3/4 cup sugar
- 3/4 cup milk
- 1/2 cup (1 stick) unsalted butter
- melted and cooled
- Peach marmalade or your favourite cream filling
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour and baking powder.
- In another bowl, beat the eggs and then add sugar, milk, and melted butter, mixing until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Scoop tablespoon-sized amounts of dough and flatten them on the prepared baking sheet.
- Place a small dollop of peach marmalade or cream filling in the center of each cookie.
- Cover the filling with another piece of dough and seal the edges.
- Bake for 15-20 minutes or until lightly golden.
- Allow to cool before serving.
Notes
These cookies can be stored in an airtight container for up to a week. Experiment with different fillings for variety!
