- 1 cup peach preserves
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Take a tablespoon of dough and make a small ball, then flatten it in your hand.
- Place a teaspoon of peach preserves in the center and fold the dough over to enclose the filling.
- Arrange the cookies on a baking sheet lined with parchment paper.
- Sprinkle with a little cinnamon on top before baking.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool on a wire rack before serving.
