Description
This Italian Seafood Salad combines the freshness of octopus, shrimp, and squid with a zesty dressing, making it a perfect dish for summer gatherings or special occasions.
Ingredients
- Octopus (1.5 lbs)
- Shrimp (8 large)
- Squid (4 tubes)
- Celery (1 rib)
- bay leaves (2)
- lemon (2)
- tangerines (3)
- Garlic (3 cloves)
- Olive oil (¼ cup)
- Honey Dijon mustard (2 tsp)
- Fresh parsley (¼ cup)
- Salt and pepper to taste
Instructions
- Begin by tenderizing the octopus. Bring a large pot of water to a boil and add the octopus. Optionally, include a wine cork while boiling to help tenderize.
- Once the octopus is tender (about 30 minutes), remove it from the pot and let it cool. Reserve the water for poaching other seafood.
- In the same boiling water, add bay leaves, celery, and a squeeze of lemon. Poach the shrimp and squid in this aromatic water until just cooked (about 3-5 minutes).
- In a large bowl, combine the poached seafood with chopped octopus, diced tangerines, minced garlic, olive oil, honey Dijon mustard, and the remaining lemon juice. Toss gently to combine.
- Season with salt and pepper to taste and garnish with fresh parsley before serving cold.
Notes
For best results, let the salad chill in the fridge for at least 30 minutes before serving to allow the flavors to meld. Feel free to add additional seafood or vegetables per your preference.
