  • 1/2 cup fresh breadcrumbs

  • 1 large egg

  • 2 cloves garlic

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic
  • minced
  • 6 cups chicken broth
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • 1 bay leaf
  • 1/2 cup acini di pepe or orzo pasta
  • 4 cups baby spinach
  • roughly chopped
  • Salt and pepper to taste
  • Grated Parmesan for serving

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix well and form into small meatballs.
  2. Place the meatballs on a baking sheet and bake for about 20 minutes or until browned.
  3. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  4. Add minced garlic and cook for another minute.
  5. Pour in chicken broth and beef broth, and add Italian seasoning and bay leaf. Bring to a simmer.
  6. Add the acini di pepe or orzo pasta and cooked meatballs to the pot. Cook according to pasta package instructions, usually about 8-10 minutes.
  7. Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese.

For a more robust flavor, consider adding fresh herbs like thyme or basil to the broth.
