- 1/2 lb ground beef (85% lean)
- 1/2 lb ground pork
- 1/2 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg

- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup diced yellow onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic

- 6 cups chicken broth
- 2 cups beef broth
- 1 tsp Italian seasoning
- 1 bay leaf
- 1/2 cup acini di pepe or orzo pasta
- 4 cups baby spinach
- roughly chopped
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
- Preheat your oven to 400°F (200°C). In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix well and form into small meatballs.
- Place the meatballs on a baking sheet and bake for about 20 minutes or until browned.
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute.
- Pour in chicken broth and beef broth, and add Italian seasoning and bay leaf. Bring to a simmer.
- Add the acini di pepe or orzo pasta and cooked meatballs to the pot. Cook according to pasta package instructions, usually about 8-10 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.

For a more robust flavor, consider adding fresh herbs like thyme or basil to the broth.
