Ingredients

  • 2 ounces cream cheese
  • 1/2 cup unsalted butter
  • 3/4 cup powdered erythritol
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 2 Tbsp protein powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whipping cream
  • 1/3 cup powdered erythritol
  • 1 cup (8 ounces) full-fat cream cheese
  • 1 tsp vanilla
  • 2 drops pink food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the cream cheese and butter until creamy.
  3. Gradually add the powdered erythritol, mixing until well combined.
  4. Incorporate the egg and vanilla extract, mixing well.
  5. In a separate bowl, whisk together the almond flour, coconut flour, protein powder, baking powder, and salt.
  6. Slowly add the dry ingredients to the wet mixture, mixing until a dough forms.
  7. Scoop out the dough and shape it into balls, then place them on the prepared baking sheet, flattening them slightly.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. While the cookies cool, prepare the frosting by beating the whipping cream, powdered erythritol, full-fat cream cheese, and vanilla until smooth and fluffy. Add pink food coloring as desired.
  10. Once cookies are cooled, frost them with the prepared frosting and enjoy!
