- 2 ounces cream cheese
- 1/2 cup unsalted butter
- 3/4 cup powdered erythritol
- 1 large egg
- 2 tsp vanilla extract
- 1 1/3 cup almond flour
- 1/3 cup coconut flour
- 2 Tbsp protein powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup whipping cream
- 1/3 cup powdered erythritol
- 1 cup (8 ounces) full-fat cream cheese
- 1 tsp vanilla
- 2 drops pink food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the cream cheese and butter until creamy.
- Gradually add the powdered erythritol, mixing until well combined.
- Incorporate the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the almond flour, coconut flour, protein powder, baking powder, and salt.
- Slowly add the dry ingredients to the wet mixture, mixing until a dough forms.
- Scoop out the dough and shape it into balls, then place them on the prepared baking sheet, flattening them slightly.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- While the cookies cool, prepare the frosting by beating the whipping cream, powdered erythritol, full-fat cream cheese, and vanilla until smooth and fluffy. Add pink food coloring as desired.
- Once cookies are cooled, frost them with the prepared frosting and enjoy!
