- 1 lb kielbasa sausage
- sliced into ¼-inch rounds
- 6 medium Yukon Gold potatoes
- peeled and thinly sliced
- 1 small onion
- finely chopped
- 3 Tbsp unsalted butter
- 3 Tbsp all-purpose flour
- 2 cups whole milk
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 cups shredded sharp cheddar cheese (reserve ½ cup for topping)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the flour, cooking for about 1 minute, then gradually whisk in the milk until smooth.
- Add garlic powder, smoked paprika, salt, and pepper, stirring to combine. Cook until the mixture thickens.
- In a greased baking dish, layer half of the sliced potatoes at the bottom.
- Top with half of the kielbasa slices and a portion of the cheese sauce.
- Repeat the layering with the remaining potatoes, kielbasa, and cheese sauce.
- Sprinkle the reserved cheese on top.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
- Let it cool slightly, garnish with fresh parsley if desired, and serve warm.

Feel free to add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
