Description

This Kielbasa Potato Casserole is a comforting, hearty dish that’s perfect for weeknight dinners. Layers of tender Yukon Gold potatoes, savory kielbasa, and a creamy cheese sauce come together to create a delicious meal that the whole family will love.


Ingredients

  • 1 lb kielbasa sausage
  • sliced into ¼-inch rounds
  • 6 medium Yukon Gold potatoes
  • peeled and thinly sliced
  • 1 small onion
  • finely chopped
  • 3 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 2 cups whole milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 cups shredded sharp cheddar cheese (reserve ½ cup for topping)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Stir in the flour, cooking for about 1 minute, then gradually whisk in the milk until smooth.
  4. Add garlic powder, smoked paprika, salt, and pepper, stirring to combine. Cook until the mixture thickens.
  5. In a greased baking dish, layer half of the sliced potatoes at the bottom.
  6. Top with half of the kielbasa slices and a portion of the cheese sauce.
  7. Repeat the layering with the remaining potatoes, kielbasa, and cheese sauce.
  8. Sprinkle the reserved cheese on top.
  9. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  10. Let it cool slightly, garnish with fresh parsley if desired, and serve warm.

Feel free to add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
