Instructions
- In a medium bowl, combine soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger to create a marinade.
- Add chicken thighs to the marinade, ensuring they’re thoroughly coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).
- Preheat your grill or oven to medium-high heat. Remove chicken from marinade and discard the remaining marinade.
- Grill or bake the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Let rest for a few minutes before slicing.
- While the chicken rests, prepare the cabbage slaw by mixing shredded cabbage, toasted sesame seeds, and sliced green onions in a bowl.
- To assemble, place sliced chicken on a sandwich bun and top with cabbage slaw. Serve immediately.
