Deliciously crispy Korean Zucchini Fritters, perfect as a snack or side dish, seasoned with a flavorful dipping sauce.
Ingredients

- 0.885 lb zucchini or 2 x 7-inch long zucchinis
- 2 large eggs
- 1 teaspoon salt
- ½ teaspoon sesame oil toasted
- ¼ cup potato starch or cornstarch for gluten-free
- or all-purpose flour
- 2 tablespoon vegetable oil or any neutral oil
- 2 tablespoon regular soy sauce or tamari sauce or coconut aminos for gluten-free
- 2 tablespoon rice vinegar or white vinegar/apple cider vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sesame seeds
- ½ teaspoon gochugaru or red pepper flakes/sliced chilis
Instructions
- Grate the zucchini and sprinkle with salt. Let sit for 10-15 minutes to draw out moisture.
- Squeeze out excess moisture from the zucchini using a clean kitchen towel.
- In a bowl, combine the drained zucchini, eggs, sesame oil, and potato starch (or flour). Mix until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Spoon the mixture into the skillet and flatten slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- For the dipping sauce, whisk together soy sauce, rice vinegar, sesame oil, sesame seeds, and gochugaru in a small bowl.
- Serve the fritters hot with the dipping sauce on the side.
Notes
Feel free to add extra spices or herbs to the batter for additional flavor. Serve immediately for the best texture.
