- 30 oz zucchini
- 2.5 tsp coarse sea salt
- 2 large garlic cloves
- 2 bulbs green onions chopped
- 1 tbsp avocado oil
- 2–3 tsp toasted sesame oil
- 1 tbsp toasted white sesame seeds
Instructions
- Start by slicing the zucchini into thin rounds and sprinkle with coarse sea salt. Allow it to sit for about 10 minutes to draw out excess moisture.
- In a large pan, heat the avocado oil over medium heat. Add the garlic and sauté until fragrant.
- Add the zucchini to the pan and stir-fry for about 5-7 minutes, or until it’s tender but still retains a slight crunch.
- Stir in the chopped green onions and toasted sesame oil, cooking for an additional 2 minutes.
- Finish by sprinkling toasted white sesame seeds and adjust seasoning if necessary. Serve warm, garnished with more green onions and a drizzle of sesame oil.
Notes
For added flavor, let the dish sit for a few minutes before serving to allow the flavors to meld. This dish can be refrigerated and enjoyed cold as well.
