Ingredients

  • 2.5 tsp coarse sea salt
  • 2 large garlic cloves
  • 2 bulbs green onions chopped
  • 1 tbsp avocado oil
  • 23 tsp toasted sesame oil
  • 1 tbsp toasted white sesame seeds

Instructions

  1. Start by slicing the zucchini into thin rounds and sprinkle with coarse sea salt. Allow it to sit for about 10 minutes to draw out excess moisture.
  2. In a large pan, heat the avocado oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the zucchini to the pan and stir-fry for about 5-7 minutes, or until it’s tender but still retains a slight crunch.
  4. Stir in the chopped green onions and toasted sesame oil, cooking for an additional 2 minutes.
  5. Finish by sprinkling toasted white sesame seeds and adjust seasoning if necessary. Serve warm, garnished with more green onions and a drizzle of sesame oil.
