Ingredients

3 cups all-purpose flour

2 1/2 cups for crust and 1/2 cup for filling

2/3 cups powdered sugar

1/2 tsp salt

12 tbsp unsalted butter melted

3 tbsp lemon zest

3 cups sugar

8 eggs large

room temperature

1 cup lemon juice fresh


Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • In a bowl, mix 2 1/2 cups of flour, powdered sugar, and salt. Stir in melted butter until combined. Press this mixture into the bottom of the prepared pan to form the crust.
  • Bake the crust for 20 minutes or until lightly golden.
  • In a separate bowl, whisk together the remaining 1/2 cup flour, sugar, eggs, lemon zest, and lemon juice until smooth.
  • Pour the lemon filling over the baked crust and return to the oven for an additional 15-20 minutes, or until the filling is set.
  • Allow to cool, then dust with powdered sugar before cutting into bars and serving.
