- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon pepper seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic minced
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 1 cup heavy/whipping cream
- 1 pound uncooked potato gnocchi
- 1/2 cup freshly grated parmesan cheese
- 2 cups (packed) fresh baby spinach
- Salt & pepper to taste
Instructions
- Season the chicken breasts with garlic powder and lemon pepper seasoning.
- In a large skillet, heat olive oil and butter over medium heat, then add the seasoned chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the skillet.
- Stir in heavy cream and bring to a simmer, then reduce the heat and let it thicken for about 5 minutes.
- Add the uncooked gnocchi to the sauce and cook according to package instructions until they float to the top.
- Reduce the heat to low, then stir in grated parmesan cheese and fresh spinach until the spinach wilts.
- Slice the cooked chicken and serve on top of the gnocchi, garnishing with additional parmesan if desired.
Notes
For a tangier flavor, adjust the lemon juice to your preference. This dish pairs well with a side salad.
