  • basil
  • parsley
  • mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white wine
  • 2 tablespoons butter
  • 1 small yellow onion
  • diced
  • ¾ cup carrots
  • diced
  • 2 sticks celery
  • diced
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup parmesan cheese
  • freshly grated
  • Juice of 1 lemon
  • ¾ cup orzo
  • uncooked

Instructions

  1. In a large pot, heat olive oil over medium heat and add the chicken breast seasoned with lemon pepper. Cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, and celery until softened, about 5 minutes. Add garlic and cook for another minute.
  3. Pour in white wine, scraping the bottom of the pot for flavor. Let it simmer for 2-3 minutes.
  4. Add chicken broth, hot sauce, Worcestershire sauce, and seasonings. Bring to a boil.
  5. Add uncooked orzo and reduce the heat to a simmer. Cook until orzo is tender, about 10 minutes.
  6. Meanwhile, shred the cooked chicken and return it to the pot. Stir in heavy cream, fresh spinach, lemon juice, and parmesan. Cook briefly until warmed through.

Notes
