  • Lemon curd (1 cup)
  • Egg (1 large)
  • Powdered sugar
  • Fresh berries (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the cold puff pastry on a lightly floured surface and cut it into square or circular shapes to fit into a muffin tin.
  3. Gently place the pastry pieces into the muffin tin cups and press down gently.
  4. Brush the edges of the pastry with the lightly beaten egg for a golden finish.
  5. Fill each cup with about a tablespoon of lemon curd.
  6. Bake in the preheated oven for 18-20 minutes or until the pastry is puffed and golden.
