- 1/4 cup olive oil
- Juice of 2 lemons
- 3 cloves garlic
- minced
- 1 tablespoon fresh rosemary

- 1 tablespoon fresh thyme
- chopped
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, mix the olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper to make the marinade.
- Add the cubed chicken to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill or oven to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers for about 15-20 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve the skewers hot, garnished with extra herbs if desired.
