Description

These refreshing Lemon Icebox Bars combine a silky smooth lemon filling with a buttery graham cracker crust, perfect for a summer dessert.


Ingredients

  • 1 ½ cups (about 175 g) graham cracker crumbs
  • 3 tablespoons (37 g) granulated sugar
  • 6 tablespoons (85 g) unsalted butter

  • 1 14-ounce can (396 g) sweetened condensed milk
  • 3 large egg yolks
  • ½ cup (120 ml) fresh lemon juice
  • 1 ½ to 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, melted butter, and a pinch of salt until well combined.
  3. Press the mixture firmly into the bottom of a greased 9×9-inch baking pan to form the crust.
  4. In a separate bowl, whisk together sweetened condensed milk, egg yolks, fresh lemon juice, lemon zest, and a pinch of salt until smooth.
  5. Pour the lemon filling over the crust and spread evenly.
  6. Bake for 25-30 minutes, or until the filling is set and the edges are slightly golden.
  7. Allow to cool at room temperature, then refrigerate for at least 2 hours before slicing.
  8. Cut into squares and serve chilled, garnished with additional lemon zest if desired.

Notes

For a sweeter bar, adjust the amount of sugar in the crust to your preference. Ensure to chill the bars thoroughly for the best texture.
