These Delicious Lemon Rhubarb Bars combine a buttery crust with a tangy lemon and rhubarb filling, making them the perfect dessert for spring.

- 1 cup flour (I always use King Arthur all-purpose flour)
- 1/3 cup butter (cold and cut into 1/2-inch cubes)
- 1/4 cup sugar
- 1/4 tsp salt
- 2 cups rhubarb (sliced into 1/4-inch thick pieces)
- 3 eggs
- 1 1/4 cups sugar
- 1/2 cup flour
- 1/4 cup lemon juice (freshly squeezed for best flavor and acidity)
- 2 tbsp lemon zest
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a medium bowl, combine 1 cup of flour, 1/4 cup sugar, and 1/4 tsp salt. Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking dish to form the crust and bake for 15 minutes.
- While the crust is baking, prepare the filling. In another bowl, whisk together 3 eggs, 1 1/4 cups sugar, 1/2 cup flour, lemon juice, lemon zest, and vanilla extract until smooth.
- Fold in the sliced rhubarb and pour the filling over the baked crust.
- Bake for an additional 30 minutes or until the filling is set. Allow to cool before cutting into bars.
Notes
For the best flavor, always use fresh lemon juice and zest. These bars can be served warm or chilled and can be dusted with powdered sugar before serving.
