Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, cream together the unsalted butter and sugar until light and fluffy.
- Add in sour cream, lemon zest, vanilla essence, and eggs, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and ground cardamom.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced rhubarb gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- For the topping, arrange the thinly sliced rhubarb on top and sprinkle with sugar.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
