  • 1/4 cup rhubarb
  • 2 tbsp sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream together the unsalted butter and sugar until light and fluffy.
  3. Add in sour cream, lemon zest, vanilla essence, and eggs, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and ground cardamom.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the diced rhubarb gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. For the topping, arrange the thinly sliced rhubarb on top and sprinkle with sugar.
