  • ½ cup unsalted butter

  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup chopped fresh rhubarb
  • powdered sugar (for glaze)
  • 1 to 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, lemon juice, lemon zest, sour cream (or yogurt), and vanilla extract to the butter mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chopped rhubarb gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
  10. For the glaze, mix powdered sugar with 1 to 2 tablespoons of fresh lemon juice until smooth, then drizzle over the cooled loaf.

Notes

Make sure to chop the rhubarb into small pieces for even distribution throughout the loaf. You can adjust the glaze’s sweetness by adding more or less powdered sugar.
