  • 4 garlic scapes
  • 2 tablespoon extra virgin olive oil plus more for drizzling
  • 1/2 cup labneh
  • 1/4 cup mint leaves plus more for garnish
  • 1/2 teaspoon sea salt plus more to taste
  • 1 tablespoon lemon zest
  • 1/2 ground white pepper

Instructions

  1. In a food processor, combine the soaked sunflower seeds, garlic scapes, olive oil, labneh, mint leaves, sea salt, lemon zest, and ground white pepper.
  2. Blend until smooth and creamy, adjusting sea salt to taste.
  3. Transfer the dip to a serving bowl, drizzle with additional olive oil, and garnish with extra mint leaves.
  4. Serve with crackers, pita bread, or fresh vegetables.

Notes

For a creamier texture, blend longer and add a little water if needed. You can substitute garlic scapes with regular garlic if not available.
