- 1 Stick unsalted butter
- 1 large shallot minced
- 8 garlic cloves smashed and minced
- 4 pounds fresh tomatoes roughly chopped
- 2 thyme sprigs
- 2 tbsp kosher salt
- 1/2 tsp freshly ground black pepper
- panko breadcrumbs
- 1 pound spaghetti or bucatini
- 1/2 cup grated parmesan plus more for garnish
Instructions
- In a large skillet, melt the unsalted butter over medium heat. Add the minced shallot and sauté until translucent.
- Stir in the smashed garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chopped tomatoes and thyme sprigs to the skillet. Season with kosher salt and black pepper. Simmer for about 20 minutes, stirring occasionally, until the tomatoes break down into a chunky sauce.
- Meanwhile, cook the spaghetti or bucatini according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Remove the thyme sprigs from the tomato sauce. Add the drained pasta to the skillet with the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water as needed.
- Stir in the grated parmesan and mix well. Serve hot, garnished with extra parmesan and panko breadcrumbs for crunch.
Notes
For a spicier version, add red pepper flakes to the sauce. Using heirloom tomatoes enhances the flavor significantly.
