Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 tsp baking powder
  • 4 large eggs (separated)
  • ¾ cup granulated sugar
  • Zest of 2 lemons
  • 2 tbsp lemon juice
  • ¼ cup limoncello liqueur
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour and baking powder.
  3. In a large mixing bowl, beat the egg yolks and granulated sugar until pale and fluffy.
  4. Add the lemon zest, lemon juice, and limoncello, mixing until combined.
  5. Gently fold in the flour mixture into the egg yolk mixture until just combined.
  6. In a separate bowl, beat the egg whites until soft peaks form, then fold them into the batter carefully.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  8. While the cake cools, prepare the limoncello mascarpone cream by beating the mascarpone, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Once cooled, slice the cake in half horizontally and spread the mascarpone cream between the layers and on top of the cake.
  10. Garnish with lemon slices or zest, and serve chilled.

Notes

For a stronger limoncello flavor, feel free to drizzle some limoncello on the cake layers before adding the mascarpone cream.
