- 1 tsp baking powder
- 4 large eggs (separated)
- ¾ cup granulated sugar
- Zest of 2 lemons
- 2 tbsp lemon juice
- ¼ cup limoncello liqueur
- 8 oz mascarpone cheese
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together flour and baking powder.
- In a large mixing bowl, beat the egg yolks and granulated sugar until pale and fluffy.
- Add the lemon zest, lemon juice, and limoncello, mixing until combined.
- Gently fold in the flour mixture into the egg yolk mixture until just combined.
- In a separate bowl, beat the egg whites until soft peaks form, then fold them into the batter carefully.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the limoncello mascarpone cream by beating the mascarpone, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once cooled, slice the cake in half horizontally and spread the mascarpone cream between the layers and on top of the cake.
- Garnish with lemon slices or zest, and serve chilled.
Notes
For a stronger limoncello flavor, feel free to drizzle some limoncello on the cake layers before adding the mascarpone cream.
