- 3 tbsp (24g) all-purpose flour
- 1 tsp vanilla extract
- 1/2 cup (112g) sour cream
- 1/2 cup (120ml) heavy whipping cream
- 1 cup (169g) butterscotch chips
- 3.4 oz package dry Butterscotch pudding mix
- 4 large eggs

Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in brown sugar and flour, mixing until combined.
- Add vanilla extract, sour cream, and heavy whipping cream to the mixture, mixing until smooth.
- Stir in butterscotch chips and dry Butterscotch pudding mix until fully incorporated.
- Add eggs one at a time, mixing gently after each addition until just combined. Do not overmix.
- Pour the filling over the prepared crust and smooth the top. Bake for 30-35 minutes, or until the center is set and only slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour. Remove from the oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.
