  • skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • melted
  • 1 tablespoon mayonnaise
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Fresh parsley
  • chopped
  • Lemon wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken breasts to the bowl and coat them with the mixture.
  3. In another bowl, combine panko breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, melted butter, mayonnaise, dried parsley, and garlic powder.
  4. Place the coated chicken breasts on a baking sheet lined with parchment paper. Top each chicken breast evenly with the Parmesan mixture.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese crust is golden brown.
  6. Remove from oven and let rest for a few minutes. Garnish with fresh parsley and lemon wedges if desired before serving.

Notes

Feel free to customize the seasoning based on your preference. You can also use chicken thighs if you like dark meat.
