- 4 cups shredded zucchini
- 1 large egg
- 1/2 cup grated cheese (such as mozzarella or cheddar)
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded zucchini, egg, grated cheese, coconut flour, salt, pepper, garlic powder, and onion powder until well mixed.
- Scoop out the mixture onto the prepared baking sheet and spread it out into 4 round tortilla shapes.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
- Remove from the oven and let cool slightly before using.
Notes
These tortillas can be made ahead of time and stored in the fridge for up to a week. They also freeze well.
