Ingredients

  • 4 cups shredded zucchini
  • 1 large egg
  • 1/2 cup grated cheese (such as mozzarella or cheddar)
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded zucchini, egg, grated cheese, coconut flour, salt, pepper, garlic powder, and onion powder until well mixed.
  3. Scoop out the mixture onto the prepared baking sheet and spread it out into 4 round tortilla shapes.
  4. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
  5. Remove from the oven and let cool slightly before using.
