  • ½ cup Greek yogurt
  • ¼ cup mango juice
  • ⅓ cup strawberry preserves
  • 1 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Blend in the mango puree, Greek yogurt, and mango juice until smooth.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a small saucepan, combine strawberry preserves and cornstarch, heating until thickened.
  8. Pour batter into cupcake liners, filling them halfway, then add a spoonful of strawberry filling, followed by more batter to fill until ⅔ full.
  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
  10. Allow to cool before frosting or serving.
