- ¼ cup mango juice
- ⅓ cup strawberry preserves
- 1 tbsp cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- Blend in the mango puree, Greek yogurt, and mango juice until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In a small saucepan, combine strawberry preserves and cornstarch, heating until thickened.
- Pour batter into cupcake liners, filling them halfway, then add a spoonful of strawberry filling, followed by more batter to fill until ⅔ full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before frosting or serving.
Notes
