- 1 tablespoon olive oil
- 4–6 ounce boneless
- skinless chicken breast halves
- ½ teaspoon black pepper
- ¼ teaspoon salt
- ⅓ cup low-sodium chicken broth
- ⅓ cup pure maple syrup
- 2 teaspoons chopped fresh thyme divided
- 2 cloves garlic minced
- 1 tablespoon + 1 teaspoon cider vinegar
- 1 tablespoon + 1 teaspoon stone-ground mustard
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken breast halves with black pepper and salt, then add them to the skillet, browning on both sides for about 3-4 minutes each.
- In a separate bowl, mix the chicken broth, maple syrup, half of the thyme, minced garlic, cider vinegar, and stone-ground mustard to create the glaze.
- Pour the glaze over the browned chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for a few minutes before drizzling additional glaze on top and serving.
Notes
For a thicker glaze, let the sauce reduce on the stove for a few minutes before adding the chicken. Pair with roasted vegetables or rice for a complete meal.
