- 8.8 ounces capellini pasta
- 32 ounces cherry tomatoes or late summer tomatoes of choice
- quartered or chopped into small bite-sized pieces
- 1 medium shallot
- very finely sliced
- 2 cloves garlic
- very finely chopped or grated
- ½ cup packed fresh basil leaves & tender stems
- very finely sliced (roughly 1.25 ounces)
- up to 1 teaspoon crushed red pepper flakes
- as desired
- 1 large lemon
- juiced (2–3 tablespoons juice)
- ¾ cup extra virgin olive oil
- ½ cup shaved parmesan
- kosher salt & ground black pepper

Instructions
- Cook the capellini pasta according to package instructions until al dente, then drain and set aside.
- In a large mixing bowl, combine the cherry tomatoes, shallot, garlic, basil, and crushed red pepper flakes.
- Add the lemon juice and olive oil to the bowl, then season with kosher salt and ground black pepper to taste.
- Gently fold in the cooked capellini pasta until well coated with the marinade.
- Let the pasta sit for at least 15 minutes to allow the flavors to meld.
- Serve with shaved parmesan on top and enjoy.
Notes
For a spicier kick, feel free to increase the amount of crushed red pepper flakes. This dish can also be served cold as a refreshing pasta salad.
