Ingredients

  • 8.8 ounces capellini pasta
  • 32 ounces cherry tomatoes or late summer tomatoes of choice
  • quartered or chopped into small bite-sized pieces
  • 1 medium shallot
  • very finely sliced
  • 2 cloves garlic
  • very finely chopped or grated
  • ½ cup packed fresh basil leaves & tender stems
  • very finely sliced (roughly 1.25 ounces)
  • up to 1 teaspoon crushed red pepper flakes
  • as desired
  • 1 large lemon
  • juiced (2–3 tablespoons juice)
  • ¾ cup extra virgin olive oil
  • ½ cup shaved parmesan
  • kosher salt & ground black pepper
  • to season

Instructions

  1. Cook the capellini pasta according to package instructions until al dente, then drain and set aside.
  2. In a large mixing bowl, combine the cherry tomatoes, shallot, garlic, basil, and crushed red pepper flakes.
  3. Add the lemon juice and olive oil to the bowl, then season with kosher salt and ground black pepper to taste.
  4. Gently fold in the cooked capellini pasta until well coated with the marinade.
  5. Let the pasta sit for at least 15 minutes to allow the flavors to meld.
  6. Serve with shaved parmesan on top and enjoy.

Notes

For a spicier kick, feel free to increase the amount of crushed red pepper flakes. This dish can also be served cold as a refreshing pasta salad.
