- 8 fresh peaches peeled
- ½ cup white sugar
- ½ teaspoon ground cinnamon
- 1 large pinch ground nutmeg
- 4 Mexican bolillo rolls
- 1 cup mascarpone cheese
- 6 tablespoons confectioners’ sugar
- 1 lemon zested
- 6 large eggs
- ¾ cup milk
- ½ teaspoon vanilla extract
- 2 teaspoons butter or as needed
- 2 teaspoons vegetable oil or as needed
Instructions
- In a saucepan, combine the peeled peaches, white sugar, ground cinnamon, and nutmeg over medium heat. Cook until the peaches are softened and syrupy, about 10 minutes. Set aside.
- In a bowl, mix mascarpone cheese, confectioners’ sugar, and lemon zest until smooth. Set aside.
- Cut the bolillo rolls in half and fill each half with the mascarpone mixture.
- In a separate bowl, whisk together the eggs, milk, and vanilla extract.
- Heat a skillet over medium heat and add butter and vegetable oil.
- Dip the stuffed bolillo rolls in the egg mixture until coated. Place in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
- Serve warm with the caramelized peaches on top.
