  • 4 Mexican bolillo rolls
  • 1 cup mascarpone cheese
  • 6 tablespoons confectioners’ sugar
  • 1 lemon zested
  • 6 large eggs
  • ¾ cup milk
  • ½ teaspoon vanilla extract
  • 2 teaspoons butter or as needed
  • 2 teaspoons vegetable oil or as needed

Instructions

  1. In a saucepan, combine the peeled peaches, white sugar, ground cinnamon, and nutmeg over medium heat. Cook until the peaches are softened and syrupy, about 10 minutes. Set aside.
  2. In a bowl, mix mascarpone cheese, confectioners’ sugar, and lemon zest until smooth. Set aside.
  3. Cut the bolillo rolls in half and fill each half with the mascarpone mixture.
  4. In a separate bowl, whisk together the eggs, milk, and vanilla extract.
  5. Heat a skillet over medium heat and add butter and vegetable oil.
  6. Dip the stuffed bolillo rolls in the egg mixture until coated. Place in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
