Description

Midnight Fudge Cake is a rich, ultra-moist chocolate dessert combining chocolate cake and fudgy brownie batter, swirled together and topped with a smooth dark chocolate ganache. It is decadent, easy to prepare, and perfect for chocolate lovers.

Ingredients

Scale
  • 1 box chocolate cake mix
  • 1 box fudge brownie mix
  • Ingredients called for on the cake mix package, typically eggs, water, and oil
  • Ingredients called for on the brownie mix package, typically eggs, water, and oil
  • 8 oz dark or semi-sweet chocolate, chopped
  • 8 oz heavy cream
  • Optional: chopped walnuts or pecans
  • Optional: caramel or salted caramel sauce
  • Optional: fresh raspberries, strawberries, or cherries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Prepare the chocolate cake mix according to the package directions in one bowl.
  3. Prepare the fudge brownie mix according to the package directions in a separate bowl.
  4. Pour the prepared cake batter into the baking pan and spread it evenly.
  5. Drop spoonfuls of the brownie batter over the cake batter. Gently swirl the two batters together with a knife or spatula to create a marbled effect. Do not overmix.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking.
  7. Let the cake cool for 10–15 minutes.
  8. Meanwhile, prepare the ganache by combining the chopped chocolate and heavy cream. Heat gently, stirring every 30 seconds if using a microwave, until smooth and glossy.
  9. Poke several holes across the warm cake with a fork. Pour the ganache evenly over the top, allowing some to soak into the cake.
  10. Allow the cake to cool further before slicing. Serve as is or with vanilla ice cream, whipped cream, or fresh berries.

Notes

  • Do not overmix the cake and brownie batters; gentle swirling creates the best fudgy marbled texture.
  • Start checking the cake several minutes before the end of the baking time to prevent overbaking.
  • Use dark or semi-sweet chocolate for a richer chocolate flavor.
  • Let the cake cool slightly before adding the ganache so it can absorb into the cake without becoming too runny.
  • Store covered at room temperature for 3–4 days or refrigerate for longer storage.
  • Individual slices can be wrapped and frozen for up to 3 months.
  • Optional additions include nuts, caramel, berries, peppermint, or pumpkin spice.
