- 12 whole graham crackers (180g)
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 8 tablespoons (113g) unsalted butter

- 1 cup (113g) chopped pecans
- 1 cup (85g) sweetened desiccated coconut
- 1 (20-ounce) can crushed pineapple
- 1 (14-ounce) can sweetened condensed milk
- 3 tablespoons lemon juice
- 4 ounces cream cheese

- 3 tablespoons powdered sugar
- 2 cups (480ml) heavy cream
- 8 to 10 maraschino cherries

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, cinnamon, and salt.
- Pour in melted butter and mix until well combined.
- Press the mixture into the bottom and up the sides of a 9-inch pie plate.
- Bake the crust for 8-10 minutes or until lightly golden, then let cool.
- In a large bowl, combine chopped pecans, coconut, crushed pineapple (drained), sweetened condensed milk, lemon juice, and softened cream cheese.
- In another bowl, whip heavy cream and powdered sugar until stiff peaks form.
- Gently fold the whipped cream into the pecan mixture until well incorporated.
- Spoon the filling into the cooled crust and refrigerate for at least 2 hours.
- Top with maraschino cherries before serving, if desired.
Notes
Chill the pie overnight for best flavor and texture. This dessert is excellent for warm weather gatherings.
