Mini Croissant Sandwiches

Description

Delicious mini croissant sandwiches filled with a creamy chicken salad mixture, perfect for parties or a tasty snack.


Ingredients

  • 2 cups cooked chicken breast shredded
  • 2 tbsp celery finely minced
  • 2/3 cup Duke’s mayonnaise
  • 1/8 tsp onion powder
  • 2 hard boiled eggs peeled diced
  • 2 tbsp sweet pickle relish
  • 1 tbsp pickle juice
  • 12 mini croissants
  • 2 leaves lettuce

Instructions

  1. In a large bowl, combine shredded chicken, celery, mayonnaise, onion powder, diced hard-boiled eggs, sweet pickle relish, and pickle juice. Mix well until combined.
  2. Slice the mini croissants in half and layer with a leaf of lettuce.
  3. Spoon the chicken salad mixture onto the bottom halves of the croissants and top with the other half.
  4. Serve immediately or refrigerate until ready to serve.

Notes

These sandwiches can be made a day in advance for easier entertaining. They are best enjoyed fresh but can be stored in an airtight container in the fridge for a couple of days.
