- 1 cup graham cracker crumbs
- 3 tablespoon melted butter
- 2 tablespoon sugar
- 8 oz cream cheese softened
- ½ cup powdered sugar
- ¼ cup lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon vanilla extract
- ½ cup heavy whipping cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture into the bottom of muffin tins to form the crust.
- In another bowl, beat the softened cream cheese until smooth, then add powdered sugar, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Spoon the filling into the prepared crusts in muffin tins.
- Bake in the preheated oven for about 25-30 minutes, or until set.
- Allow to cool completely, then chill in the refrigerator for at least 2 hours before serving.
Notes
You can garnish with extra lemon zest or whipped cream for a decorative touch.
