Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, melt the unsalted butter over medium heat and sauté the diced onion until translucent.
- Add minced garlic and mixed mushrooms to the skillet, cooking until mushrooms are tender and browned.
- Stir in fresh thyme, salt, and black pepper.
- Sprinkle flour over the mixture and cook for 1-2 minutes, stirring constantly.
- Gradually pour in the vegetable broth and heavy cream, stirring until the mixture thickens. Remove from heat.
- Unroll the puff pastry and cut into circles to fit your ramekins. Fill each ramekin with the mushroom filling and top with grated Gruyère cheese.
- Cover with the puff pastry circles, sealing the edges. Brush the tops with beaten egg.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.
- Let cool for a few minutes before serving.
