Description

These Mini Pumpkin Donut Muffins are the perfect fall treat, fluffy and spiced just right, coated in a sweet cinnamon sugar topping.


Ingredients

  • ¾ cup (180ml) pure pumpkin puree
  • ½ cup (110g) packed light brown sugar
  • 1 large egg
  • at room temperature
  • ¼ cup (60ml) sunflower oil (or other neutral liquid oil)
  • ½ teaspoon (5ml) pure vanilla extract
  • 1 ¼ cups (180g) all-purpose flour
  • ¾ teaspoon pumpkin pie spice (or make your own homemade pumpkin pie spice)
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup (60ml) whole milk
  • ⅓ cup (65g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoon (42g) unsalted butter
  • melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large mixing bowl, combine the pumpkin puree, brown sugar, egg, sunflower oil, and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
  5. Spoon the batter into the mini muffin pan, filling each cup about ¾ full.
  6. Bake for about 15-20 minutes or until a toothpick inserted comes out clean.
  7. While the muffins cool, mix the granulated sugar and cinnamon in a small bowl.
  8. Dip each mini muffin in melted butter, then roll in the cinnamon sugar coating.

Notes

Make sure to not overmix the batter to keep the muffins fluffy. You can also use pumpkin spice instead of making your own blend.
